There are many ways to roast chicken, but what we're looking for is a crisp, golden skin on the outside, and tender and very moist within, and as it roasts that the wondrous aroma fill your kitchen that and you a feeling of satisfaction and fulfilment.
- Start by rubbing oil or butter all over chicken and season it
- Place in a roasting tin
- Calculate cooking time allowing 16-20 minutes per 450g/1lb plus 16-20 minutes.
- When this time is up, remove the bird from the oven and check that it’s cooked by gently tugging the leg to see if it has some give and inserting a skewer in the thickest part of the leg and if the juices run clear the chicken is cooked.
